The nib is where the flavor is, and to make chocolate we crush it up with sugar. We recommend using nibs like nuts—in cookies, salads, bread, etc. Cacao nibs are the purest, most direct expression of a cacao bean’s flavor in all its delicious complexity. Lots of factors impact flavor. The beans take on the characteristics of the region where it is grown —its terroir, the fermentation/drying process, how we roasted the beans, and it varies from harvest to harvest. In the 2017 harvest of Costa Esmeraldas, Ecuador nibs, we taste a strong base of chocolate, roasted nuts, light fruit, and floral notes.
